Ok, first the basics:
- Deliveries made
- Number of turns played
- Steps moved (sum of the number of steps made each round)
- A rundown of the victory points :
-- Points from cows
-- From buildings
-- From commercial outposts (deliveries)
-- From Bonus tiles
-- From objectives
-- From money at end of game
-- For doing the end game triggering delivery
- Rundown of workers owned at game's end
-- Number of builders
-- cowboys
-- Engineers
-- Jokers
Maybe also:
- Number of permanent certificates
- Number of duplicates allowed (from bonus tiles)
- Total number of objectives
- Total number of bonus tiles
- # of cows in deck
- total number of workers (a bit redundant but it makes the balance workers - cows more explicit)
- # Total number of workers spent on buildings (sum of worker costs of buildings owned at the end)
-- Possibly a rundown of buildings owned (at the end or at some point during the game) or maybe, better yet, how many times they were used for what they are (not for a single auxiliary action). Any of this requires 12 entries though... Obviously, buildings not available during the game (face a or b) are should not be counted and do not impact the average across games.
-- If we go for number of times each building got used, then we might as well do it for neutral buildings too.
-- Number of workers used as engineers during the game (or possibly split between engineers and jokers...)
-- Number of workers used as builders during the game
-- Number of workers used as cowboys during the game
-- Number of Engineers discarded
-- Number of Cowboys discarded
-- Number of Builders discarded
-- Number of Joker workers discarded
-- Number of exchange tokens obtained (or owned throughout the game, which just adds the starting ones)
-- Number of cows removed from game
-- Total money made by discarding cows at buildings
- Hand Size (at game's end)
- Max movement allowed (at game's end without spending cowboys)
-- Possibly some rundown of the improvements of the personal board ? (Like "Cleared circle for cow removal ? etc...)

I think it would make more sense to use a '-' only for building that were not available during the game (wrong a/b side).
